Festive Bengali Darbesh & Ghee Sandesh
Classic Kolkata festival sweets prepared with artisanal chhena, besan pearls fried in Sree Ghee, and flavoured with cardamom, saffron, and Sree Honey.

Ingredients Required
- 2 cups Fresh Chhena (cottage cheese)
- 1 cup Besan (Gram flour) for Darbesh boondi
- 3 tbsp Sree Ghee for frying and roasting chhena
- 1/2 cup Sree Honey & 3/4 cup Organic Sugar
- 1/2 tsp Cardamom powder & Silver leaf (Vark) for garnish
- Cashews and raisins sautéed in Sree Ghee
Step-by-Step Method

Knead fresh chhena on a flat plate until smooth and velvety.

In a non-stick pan, warm 1 tbsp Sree Ghee, add chhena and sugar on low heat, cooking gently for 8-10 minutes without browning.

Shape into traditional Sandesh moulds while warm.

For Darbesh, fry tiny besan droplets (boondi) in hot Sree Ghee until crisp, steep in saffron syrup, toss with roasted nuts and Sree Honey, and shape into rounded golden laddoos.
