Ingredients Required
- 2 cups Maida (All-purpose flour)
- 2 tbsp Sree Ghee (for moyan/shortening)
- 1/2 tsp Salt
- Lukewarm water for kneading
- Sree Ghee for deep frying (generous quantity in kadai)
Step-by-Step Method
In a large bowl, mix maida and salt. Rub in 2 tablespoons of warm Sree Ghee thoroughly with fingers until the flour holds shape when pressed.
Gradually add lukewarm water and knead into a smooth, soft, pliable dough. Cover with a damp cloth and rest for 20 minutes.
Divide into small lemon-sized balls (lechi). Smear with a drop of ghee and roll evenly into 4-inch thin circles without using dry flour.
Heat Sree Ghee in a deep heavy-bottomed kadai until hot. Gently slide in a rolled luchi and press softly with a slotted ladle until it puffs into a golden sphere.
Flip immediately, fry for 5-8 seconds, drain on paper towels and serve piping hot with Cholar Dal or Alu Dum.
